Asian inspired beef jerky. [Homemade]

From scratch Asian beef jerky marinated overnight with dark soy, tamari, allulose sugar, shaoxing wine, rice vinegar, garlic powder, ginger powder and espelette pepper. Cold smoked with oak and hickory for three hours before 2.5 hours of convection.
